Grate it, add it to grated carrot, some roasted sesame seeds, some vinegarette and whatever else you'd like to add to make a gorgeous salad.

I peel it, brush with oil and salt, and roast.

You can also boil then puree it and add it to muffin mix to make pink muffins. Then no-one need know they're eating beetroot.

grate it raw, mix with good olive oil, capers and thinly sliced red onion and sherry vinegar. \

serve with roasted fish.

Slice thinly.
Dress with vinaigrette and fresh mint.
Add crumbled fetta and walnuts.

Delish with grilled lamb aND A GOOD BOTTLE OF RED.

DON'T PEEL IT!

It dyes everything red!

Best thing is to wash it and bake it in foil for about an hour (like a potato) then let it cool. You can then handle it and take the skin off easily and then grate it or chop it with onion and mayonaise to make a russian style salad or use in soup.

I still have a pink chopping board!!!!

(BTW I am lazy - the other suggestions are great but require more cleaning up)

Use it in a salad or juice it like my dp does. Don't drink it too much though as it turned his wee a bit reddy-purply after overdoing it one day

Chocolate beetroot cake!

100g/3.5oz drinking chocolate
230g/8oz self-raising flour
200g/7oz golden caster sugar
100g/3.5oz dark chocolate, minimum 60% cocoa solids
125g/4.5oz unsalted butter
250g/9oz cooked beetroot
3 large eggs

Preheat the oven to Gas Mark 5, butter & flour a 7" cake tin. Sift together
the drinking chocolate and the flour and mix the sugar in. On a bowl over a
pan of simmering water melt together the chocolate and the butter. Puree
the beetroot with a food processor then whisk eggs and stir them into the
beetroot. Add all three mixtures together and mix thoroughly. Pour mix
into tin and bake for 50 minutes. Leave to stand in the tin for 10 minutes
before turning onto a cooling rack.

It's yum!
