My cheese sauce is curdling!

What am I doing wrong? A bit of butter, flour, milk, cheese - do you then heat fast or slow - I tend to do it slow

I boil the milk and butter first then add the cornflour and cheese.

Are you putting them all in at the same time? I usually melt the butter then add the flour, cook it while it's sizzling for 30 secs or so, gradually add the milk, whisking all the time. Then simmer for a couple of minutes on a medium heat until it thickens, take it off the heat and add the cheese. I whisk all the time to stop it going lumpy or burning. HTH

Make sure you use regular flour not self-raising. 36 and just discovered this!

Bugger. The milk boiled over and curdled.

May be a stupid question but is it still safe to eat?
