Carrot cake recipe any one?

Dd has been asking for ages to make carrot cake but all the recipes I ever come across don't seem to have many carrots in, all seem to be a case of a couple of grated carrots are in there so we call it carrot cake. Maybe that's what all carrot cakes are like. Does any one have a recipe?

big cook little cook have a simple recipe for carrot cakes on their website. Quite a high ratio of carrot, I would say, plus a large helping of raisins.

I have used this one from Delia several times. I personally don't like the topping but I am sure you can substitute it with something else.

I didn't like the topping from Delia's recipe either. Does anybody have a different suggestion? Preferably one that tastes just like the scrummy topping on most shop-bought carrot cake, mmm!
