What to do with tired looking parsnips?

For some reason I bought a whole bag of parsnips a while back. Some went in the beef caserole and some were roasted with the Sunday lunch.

Now I need ideas for how to use up the rest please!

...its its something I can feed to the kids for tea all the better.

you could do honey roast parsnips like these

once they've had a nap....soup them.

peel, chop and roast (approx 30 mins) with some honey, puree with veg stock and stir in some cream/fromage frais - yummy.

that'll teach 'em to look tired
