Does anyone have a recipe for fruit loaf / cake done in a bread maker.

Just bought a bead maker and wondered it anyone had recipes for a fruit loaf or other sweet bread.

What sort of breadmaker? I have a panasonic and there are loads of recipes that came with it.

Cakes and Teabreads. There are bake only recipes for fruity cake, parkin, buttermilk loaf, marmalade cake,gingerbread, marbled chocolate and vanilla cake, banana tea loaf, boozy cake (!).

You can also do a spicy fruit loaf on a normal programme but I think you need the fruit and nut dispenser to add the fruit at the righ moment.

Any of those any good?

It is a kenwood. It doesn't have a nut an fruit dispenser ,but it does have a bleep when you can add such ingredients.
Banana tea loaf or a mixed fruit loaf would be good.
I can't believe how much nicer the bread tastes.

Banana Tea Loaf

225g SR flour
1/4 tsp bicarbonate of soda
1/2 tsp salt
75g butter
50g caster sugar
500g bananas (with skin), peel and mash
1 medium egg, beaten

  1. Sieve flour, salt, bicarbonate of soda together in a bowl.
  2. Rub butter into flour until it resembples breadcrumbs.
  3. Stir in sugar, bananas and beaten egg. Mix well.
  4. Remove kneading blade from bread pan and line bottom and sides with parchment.
  5. place mixture in pan, being careful to ensure mixture is inside parchment.
  6. Select bake only program and enter 45 mins on timer.
  7. After baking, tes with a skewer to see if the cake is cooked. If not, select back only program enter a further 3-5 mins on timer. If it is just slightly sticky this will cook through during the stand period.
  8. Remove pan from breadmaker and leave to stand for 5-10 mins before removing from pan and allowing to cool.

I haven't done this and it looks a lot of faff to me!

Oh if you want to do the bread and can add fruit, here's the spicy fruit loaf recipe

For a large loaf

1tsp yeast
500g strong white flour
1tbsp sugar
25g butter
1.5tbsp milk powder
1.5tsp salt
350ml water
2.5tsp cinnamon
100g dried mixed fruit.

never done that one either.

Thanks for those Ceolas. The spiced bread seems easier to do than the banana, so I might have a go at that.
