ok, got a random selection of fresh food in the house

have decided to try to see how many meals we can make out of it

any suggestions?

we have
whole chorizo sausages
tomatoes
feta cheese
halloumi
ricotta
natural yoghurt
parmesan
garlic
lemons
handful spinach
aubergine
red onion
white onion
spuds
creme fraiche
garlic
lemons

got lots of cannellini beans in the cupboard for some reason

Chorizo, cannellini beans and spinach cooked together in a sort of casserole, very nice.

Cook aubergines, onions, garlic, tomatoes together for a ratatouillish thing and have it with the feta on top.

Ricotta, natural yoghurt, creme fraiche and lemons are the beginnings of a tasty cheesecake.

Halloumi fried with some red onions make lovely sandwich filling.

Roast spuds in wedges with skins on and make a dip with creme fraiche, garlic and some chopped up spinach.

How am I doing?

OK how about
Tomato, feta, cannellini bean salad dressed with lemon juice and olive oil

Layered Moussaka type thing with aubergine slices, potato slices, tomato sauce made with tomatoes/onions/garlic. Cheesy sauce made with ricotta/natural yoghurt/parmesan.
Layer up grilled aubergine slices, tomoto sauce, cheesy sauce, aubergine, tomato sauce, potato slices and cheesy sauce and bake for an hour or whatever.

Fried hallumi drizzed with olice oil and lemon juice on top of a spinach salad.

Sweat spinach, mix with ricotta and grated parmesan, and dump ontop of pasta. Or if you have lasagne sheets, do tomato sauce and cheese sauce as avbove and layer with spinich to make yummy lasagne.

Cannellini beans drained and blasted in food porcessor with garlic and lemon juice make a yummy hummous style dip

Jkt spuds with creme fraiche and aubergine/beany/oiniony/garlic/tomoto casserole.

Actually this is a fun game, I shall be back on friday when my cupboard looks bare for inspiraton!!

Well I made a version of aubergine parmigiana tonight with the ricotta and it was divine. And a massive pot of mushroom soup with the onion, tarragon, thickened with some of the cannellini beans and some dried mushrooms retrieved from the back of the cupboard - a dollop of the creme fraiche can go in that.

I shall make crunchie's bean dip or salad for lunch tommorrow I think and soph's potato wedges for DS supper. thankyou.
