Nice and fairly simple coffee cake recipe wanted please

I love coffee cake, but as I am cutting down on shop bought, processed and fatty foods - for the sake of the environment, my purse and my belly I want to make my own.

Is it as simple as bunging some coffee in an ordinary sponge recipe and then more into butter cream (did'nt I say I was cutting down on fat )?

I have two staple coffee cake recipes - the first is a 2-egg Victoria sponge where you add 2tsp instant coffee dissolved in 1tbsp boiling water after beating in the eggs, then add 1tbsp instant coffee in a tiny bit of water to the buttercream.

Seocnd one makes a loaf cake and is one of my favourite cakes ever:
6oz marg/butter
6oz sugar
8oz SR flour
pinch salt
2 eggs
1 tbsp warm water.
Mix everything together, 2lb greased loaf tin, gas 4, 1hr.
Dissolve 2 level tbsp instant coffee, 2 level tbsp sugar in 1/4pt boiling water.
Score hot cake in a diamond pattern and pour over the topping. Leave to cool in tin.

oh - have checked folder of ancestral recipes and it appears there's another one, called by my mum Quick Coffee Cake, which is an all-in-one sponge type:

6oz SR
1 level tsp baking powder
6 oz marg / butter
6 oz sugar
3 eggs
1 level tsp instant coffee in 1tbsp boiling water
Mix all together, 2 greased 7" sandwich tins, gas 4 25-30min, sandwich together with chocolate spread.
