Recipes a 13 year old can make without too much hassle

My 13 year old niece likes cooking so I am giving her a file she can keep her own recipes in, and want to start it off for her. I have come up with baking and pudding ideas, but what would be some good recipes for the "starters", "fish", "meat" and "vegetables" sections? Any ideas gratefully received and duly copied in!

bacon and tomato pasta,.

Chopped bacon into a saucepan, with onins and garlic. Brown it off, and dump a tin of chopped tomatoes in it. Mix with pasta, and serve with grated cheese.

Med Veg

Onion, courgette, peppers and cherry tomatoes, with 2 crushed garlic clqaves. Stir fry these for a few minutes until slightly blackened. Serve with noodles or fish,.

Cheese and potato pie

Boil and mash potato and soften some onions in a frying pan. mix in with a generous wodge of grated cheese, and put itno a cassarole dish that has been lined with ready roll pastry (or her own if she can make it)

salmon/tuna pasta
cook pasta
cook broccolli (or sweetcorn.peas - whatever - frozen are fine)
open tinned tuna/salmon and drain
mix it all with a dollop of philidelphia and a fe wdollops of creme fraiche

Pitta pizzas. Spread uncooked pitta breads with red pesto. Top with grated cheese, sliced onions, olives etc and a sprinkle of oregano and drizzle of chilli oil. Bake.
