Chicken and rice soup help

I have some leftover cooked chicken and fancied making chicken and rice soup. Can only find american recipies on line need a simple recipe to give me ideas of quantites.

Oh well I have made it anyway
1 tbsp olive oil
1 onion
1 leek
2 med carrots
1 pile of chicken bits
2 chicken stock cubes
3/4 cup rinsed long grain rice

Fry off onions in oil

add other veg and chicken, stir through for 2 mins,

Add stock and additional water to a total off 1 and 1/2 pints in total,

Chuck in raw rice,

Bring to boils and simmer until I remember I have soup on and go back to check on it .

Oh and I aded a sprinkle of dried sage and some black pepper.

It is lovely MIL wants a tub in to try it .
