Just searched for a Banana Muffin recipe and came across this website which looks fabulous!

I make muffins quite a lot but always find my banana muffins are a bit dry and tasteless.. any suggestions?

FFF I shall let you know how the Banana choc chip muffins turn out once I made them...

Well, I made some lovely Banan and choc chip muffins but adjusted the recipe a bit and they come out fabulously deliciously seriously YUM!!!!!!!Even if I say so myself, lol!
Here is the changed recipe:
-115g unsalted Butter
-115g sugar ( I used ca. 1/2 demera and 1/2 granulated sugar)
-1 Egg

  • ca. 230g mashed Banana (two medium to large Bananas)
-1tsp Baking soda -1tblsp Hot Water -1tsp Baking Powder -340g Plain Flour -1/4tsp Salt -1/2tsp Cinnamon -1/2tsp ground Ginger -100g chopped Hazelnuts -150g white chocolate for Baking (bashed up into lil pieces as to lazy to grate it, lol)
  1. preheat oven to 190degree celsius and grease a Muffin tin or insert Muffin cases

  2. In a large Bowl cream the Butter & Sugar with an electric Mixer

  3. Add the egg, mashed Banana the Bakingsoda(dissolved in the hot water) and the Bakingpowder and mix well.

4)In another Bowl combine the flour, salt, cinnamon, ground ginger, hazelnuts and chocolate.

  1. Combine the wet & dry mixture and mix well with the electric Mixer.

  2. Spoon into the prepared Muffin tin/Cases and put into the preheated Oven

  3. Bake for 20-25 minutes
