Chicken casserole recipe please

Looking for something for dh and I but also ok for ds (9 months)

I do one where I brown cubed chicken with a chopped leek. I then add a tin of chopped tomatoes, herbs and whatever random veg are around that day (typically any from broccoli, mushrooms, peas, sweetcorn, sweet potato, carrot, red pepper etc)
When it's cooked, I take out dd's and keep it separate. Then I can chuck Worcester sauce, curry powder or whatever into ours.

Thanks that sounds good. All the ones in my books are white wine based.

I make it up as I go along as a rule.
It's nice with fresh basil in it, sort of mediterranean stylee
It's a great way to practice smuggling veggies into food
