lentil & tomato pie (it's a Good Housekeeping recipe, and really good with jacket spuds). Or moussaka?

lulumama · 25/01/2007 20:14

i am the only one who likes aubergines, not a huge fan of lentils though !! thanks though x

Delia's Shepherdess Pie- very simple, serves 4 and is delicious! My ds even likes it (minus the spices and seasoning of course)

lulumama · 25/01/2007 20:17

Hopping John? AKA rice & peas (which bizarrely don't appear - it's rice, kidney beans, chilli and coconut cream. Caribbean recipe)

lulumama · 25/01/2007 20:24

can i do that without kidney beans> and what would accompany that? salady stuff ? sounds tempting

OP posts:
aDad · 25/01/2007 20:25

risotto?

curry?

CorrieDale · 25/01/2007 20:25

Hmmm, if it has to be special, then maybe not...

Leek & gruyere flan. Rich and fairly oozing with calories.

CorrieDale · 25/01/2007 20:26

Replace the kidney beans with any beans or chickpeas. Well, not baked beans, obviously, but any others. And you can add all kinds of veggies to the mix. An ordinary tomato/green salad would be fine with it, I should think.

lulumama · 25/01/2007 20:26

am liking flan.....

aDad...DH does not eat rice!!!!! but curry..that could be good..with some thing else with it.......

CorrieDale · 25/01/2007 20:29

No Hopping John for DH then! Rice being something that can't be substituted.

We always have naan or chapatis with curry - and you could do some little side dishes to go with it, if you felt like really pushing the boat out.

vegetarian chilli? If DH doesn't like rice try serving it with warm tortillas on the side? If I'm making veggie chilli I put cashews in it to bulk it up.

Sugarmagnolia · 26/01/2007 16:29

vegetarian lasagne, made with quorn mince? Serve with salad and garlic bread?

lulumama · 26/01/2007 22:04

thank you ...am liking the idea of veg lasagne..can;t cook with nuts as DS has an allergy !!!

I've found mushroom strognoff goes down well and even committed meat eaters like it better than the meat version.
Fry mushrooms, garlic and onions for approx 5 mins
add teaspoon flour to thicken
Mix carton sour cream and creme fraiche in a bowl.
Stir into mushrooms and add pepper and serve with rice.
Very easy and yummy. Add salad and garlic bread to pad out and then a pud.
You'll be talking wedding venues by the end of that

DimpledThighs · 26/01/2007 23:25

lulmama if you go the curry route there are load of lovely extra that you can do to make it special that are not too much hassle (e.g. grek yoghurt, cucmber and mint - that's a cucumber raita that is!)

lulumama · 27/01/2007 08:26

thanks mog, sounds delish !

thanks dimpledthighs... curry is also on the list !

am going to speak to my brother later and see what he likes the sound of

or it is cheese sandwiches if none of these are tempting !
