banana cake

have just seen the "yummy yummy in my tummy" bit of nickjr and it was the banana cake one again, and it does look yummy yummy.

Does anyone have a recipe for a yummy banana cake??

Banana loaf Grease and line a loaf tin. Sift 8oz self-r flour + 1/2 teasp salt into mixing bowl. Add 4oz butter, cut into small lumps. Stir in 6oz castor sugar, 4oz suktanas or raisins, 1 oz chopped walnuts and 4oz washed glace cherries. Peels and mash 3 large bananas and stir in. Then break in 2 eggs and stir in well. Bung into loaf tin. Bake at 180/gas 4 for about 1-1-1/4 hours. Delish! have made this lots of times. Nice with or wothout butter, cut into slices.

i just do a basic sponge mix, 6ozs sugar (can use either white or a light brown one), 6ozs unsalted butter, 6ozs self raising flour, 3 eggs, 1tsp vanilla essence, 1tsp baking powder, 3 mashed bananas, bake for 45mins

Sounds lovely, might try it tomorrow. What if I wanted to put bran in it (all bran), would I leave out some of the fruit - kids not fussed on cherries...

I rarely use the cherries.

Do always put in the dried fruit though.

Feel inspired, will make one today I think!

oooh sassy that sounds nice. What sized loaf tin do you use? I only have 2lb ones and I think they may be too big.

Don't know about lbs. My book says 9x5x3 size but I always make 2 smaller loaves and freeze one.

9x5x3 sounds like a 1lb loaf tin. Will give it a go later anyway as I have some bananas that need eating up. Have just made Marsy's lemon drizzle cake though, so we might be caked out for a bit!!

can i leave the walnuts out, we're not keen on nuts, should i put anything else in instead. I love banana cake
