Nigella Banana Muffins??

Anyone followed the recipe for the banana muffins in Nigella's "How to be a domestic goddess"???

Well, I made them today, was slightly concerned by the lack of buttermilk... but who am I to question a recipe... well I am certain I followed the recipe to the letter as I have never made them before and was v. careful... but they didn't turn out like muffins... more like spongey rock cakes

I made some raisin muffins instead from a tried and tested recipe... but it's ticked me off a bit.

Has anyone else made these?? Successfully??

i made her blueberry ones yesterday and just used milk instead of buttermilk (a little less than she said) and they were fine

not tried her banana ones, but often her recipes require a trial run which is tedious - some just don't work

there are quite a few mistakes in some of nigellas books, if you check on her web site, it lists the amendments.

also, if you search the forum, there might be something in there about corrections.

i did make her thai red curry from nigella bites last night, that was lovely.

The recipe didn't call for milk either!!

Oh how very annoying... I looked on the website (thanks again for the great tip!) and the recipe is completely different... it calls for milk (I was right to doubt the book!) and also a sr flour instead of the plain stated. and sugar too, which is doesn't ask for in the book!!

I haven't made them myself but I have seen them slagged off by lots of people on a particular forum (sorry can't remember which one).

glad the web site helped. i joined it a couple of weeks ago as i'm a huge nigella fan, she's like i am in the kitchen, a bit slap dash, which is probably why some of the recipes are wrong

I love Nigella too, and this is the first time I have ever had a problem!! I will take the positive out of it, I thought it didn't seem right when I was baking it... so I must be getting on alright with learning how to bake

Are you talking about the honey and banana ones? Mine were horrible too! And not sweet enough....I will check the website for amendments!

In the domestic goddess book, where you melt the honey and butter in a pan, then add to the bananas etc etc...

the recipe is completely wrong, going to give the website version a go...
