simple meal please

having a friend coming over 2nd feb for a girly night (plus shes having problems with her boyf). I've got no kids this night and have told dh to go up the pub.

Need a nice meal to cook, something that is quite simple that can be prepared in advance ish but something a bit wow.

any ideas

What about salmon parcels? Salmon fillet, lemons and butter in foil parcel. 20 mins voila! Serve with a lovely salad or roast veg! Yum!

eton mess made with bought meringues.. always a winner or how about ice cream with an expresso poured over it and crushed almonds.. toberlone fondue is my winner dessert.. and quick and easy..

salmon en croute? can't exactly remember how it goes but it's bog easy - something like, piece of salmon, squeeze lemon juice, wrap in Jusrol puff pastry, bake (you do need recipe though, can't remember how long it takes)

baked bananas? erm grand marnier erm score skins erm foil

really must buy a proper cookery book

Chorizo & Courgette Pasta

Fry courgette and chunks of chorizo then add some arribiatta sauce (the fresh kind) and some pasta - serve with hunks of bread, a good rioca (sp?) and some parmesan to sprinkle.

Then for pudding - fresh fruit with greek honey - not the crappy low fat one and some honey drizzled over the top.

Thats what we have for dinner tonight and always goes down a treat!

normally i would opt for a curry but she doesnt like anything spicey.

Chicken casserole, nice and easy, can be done in the afternoon then just shoved in the oven a couple of hours before she comes. Posh mash to go with it. Can find a recipe if you´d like?

Pudding - 2 muffins warmed through, vanilla ice cream with a chocolate bar melted on the top.

Would do something that can sit in the oven, ie salmon with some herbs and wuite wine wrapped in tin foil,
or a homemade lasagne,
or chicken breasts with a slit cut in the middle, stuffed with saute onions, some cheese and herbs then wrap that in foil.
Or you could do a pasta dish, prepare it and then you just have to reheat.
If you have some nice glases you could make mini trifle,
or a mix of meriange, ice cream, fruits, nuts, sweet sauce.
Or baked bananas cut in half with a mars bar in the middle wrapped in foil.
I recently did bananas in the slow cooker with run and almonds, brown sugar and butter....hmmmmmm

YMOT might do a homemade lasagne with salad and crusty bread yum, then can make extra and freeze it.

1 tub mascarpone, 1 large bar plain chocolate, melt them together in a saucepan and pour into individual ramekins to set (makes 4). Or eat warm , straight from the saucepan and them buy another tub of mascarpone, another bar of chocolate and try again. If you're feeling poncey, sift cocoa and icing sugar over the top when they've set and add a chocolate curl
