Wouldn't it curdle when it unfreezes again?

fizzbuzz · 21/01/2007 15:15

Does it curdle when you defrost it? Made some custard and froze that, and it seemed ok, but when I defrosted it, it was curdled. I know you can freeze milk

you can freeze cream, I think you can freeze all sorts but it says on the side of the carton. Had some of that longlife cream the other week (which was horrid!) and you could freeze it one way but not the other eg yes whipped, no normal - can't remember which way tho. I'd try it and if it doesn't defrost well then don't do it again!

DumbledoresGirl · 21/01/2007 19:06

I think you can freeze it if it is whipped, but please note, I said think

gingermonkey · 21/01/2007 19:20

none of us are much use, are we?!

fizzbuzz · 21/01/2007 19:41

Can you freeze it cooked as in creme brulee?

Surely someone somewhere must know. Perhaps I should contact Nigella!

Well.. I freeze milk and cheese ok. I seem to remember many years ago buying frozen cream. It was in lumps in a bag, so you just defrosted as many lumps as you needed... ie: 1 or 2 for your coffee. Anything with a high fat content freezes well.

PandaG · 21/01/2007 22:22

no idea re coked cream - sorry! I however like creme brulee and if you have one that needs eating...happy to oblige!

agree that you can freeze whipped cream no problem btw

PandaG · 21/01/2007 22:22
