Just amde another pot of this Tomato soup and I want to share as it so easy and quick.
2tbsp oliveoil,
1 chopped onion, chopped,
1 chopped carrot, chopped,
1 chopped stick of celery,
1 cloves garlic, crushed or finely chopped,
750g (1½lb) quartered ripe tomatoes
400g (13oz) can of chopped tomatoes
1 litre chicken stock
- Sauté the onion, celery, garlic for 5mins in olive oil.
- Add tomatoes and saute for a further 3-4mins
- Add the can of chopped tomatoes and chicken stock, bring to the boil and simmer for 20-30 minutes.
- Purée in batches in a blender once cooled or in pot with a hand blender.
Season and serve garnished with chopped basil and a drizzle of extra virgin olive oil and/or cream.
I miss out the celery as I don't like it, can use a leek instead.
I use veg stock in stead of chicken
For kids you might want to seive it to get rid of the tomato seeds.
LOVE IT, better go and stir mine now, taking a flask to work tomorrow.
