Vege curry. Fry onion garlic throw in curry paste add variety of fairly large chuncks of veges (last night it was carrots cauliflower zucchini) then some stock and let it simmer till veges are done - serve with 10min basmati rice. Easy and healthy.

CT what a brilliant idea!!!

If you can, try to get hold of Delia Smith's "One is Fun". It was published years ago, but had some pretty good recipes in it, most fairly quick to prepare.

Otherwise have you tried Websites like bbc.co.uk/food, or sainsburys? they have lots of recipes/ideas, and probably some ideas for meals for one (just thought about that, I'll be off there later, as dh is working away ATM)

Curry sounds simple and delicious, chunks of veggies mmmmm...

Ended up with mozzerella, avocado and sundried tomato salad and good bread tonight. Determined not to live on nachos anymore!

Hi Blushc - just visiting your thread cause I had never heard of you before and you came and complimented me on my pagan link

We are a vege household. Always hard eating for one isn´t it. When I used to do that I tend to make something that I can eat over two nights or take take to work the next day. A toastie pie machine is good for making little instant pies! Put in a variety of fillings surrounded by pastry.

If you like nachos maybe other bean options are a good idea.. tortilla burrito.. rice with beans... beans in the toastie pie machine!
