chicken casserole freezes well. I use couple of onions, 4/5 carrots, some potatoes, parsnips if I have them, and some stock - (sometimes use a cube I have to admit). Saute chicken until golden, add onions, sayte some more, add other veg and stock to just cover. Simmer gently - I often use a slow cooker. Can puree this to make a soup, may need extra liquid, or just serve as a casserole. Nice with green veg and crusty bread.

make chicken nuggets and freeze them

zizz the chicken or chop finely, grate in some cheese and add pepper etc to taste. Bind with a bit of mayo, shape into nuggets, flour, egg and breadcrumb.

I also put some garlic in my chicken nugget mix.
