Never done it myself but I guess they would make a thick creamy soup if blended together with cream/milk and some herbs?

i had new covent garden butternut squash and sweet potato soup the other day and it was v nice. Think it was lightly spiced.

I'd be tempted to roast them with garlic and spices, and then blend with stock.

Butternut squash makes a really scrummy soup.

1 x butternut squash peeled and de-seeded then cut into cubes
1 x chopped onion
1 + 3/4 pint of veg stock

Boil for 45 mins then blitz with the blender,
serve, add a swirl of cream if desired!

Can't think why not - pumpkin soup one of those antipodean basics! Basic soup might be with onions/garlic as base, add chopped/peeled veges and stock and simmer till soft. Cream/nutmeg or even curry spices would be good additions. Google pumpkin soup to get more ideas!

Delia#s recipe is nice, same as everyone's else's suggestion but add a little toasted sweetcorn too

well its made i followed furballs recipe and added sweet potato it is yummy but maybe a bit too sweet couldnt have a second bowl of it
