look at delia online - she has a lovely moussaka recipe with puy and green lentils (although one type would do)

and she does a nice lentil, walnut and goats cheese salad

cook em up with sage and onion. add a splash of white wine and half teaspoon of mustrad powder and serv as accompaniment to anything vaguely piggy. or pheasanty. or anythingy really, they're delicious.
i await suzywong's missive with great excitement, love puy lentils.
oh, also great in minestrone.

I 'm afraid I must go to bed now, there are plenty of good ideas on here already

I will jsut say mirepoix of onion celery and carrot in olive oil, garlic and herbs, red wine, reduce and add lentils and stock and bayleaf and a dash of balsamic vinegar and salt and peper and they keep in the fridge for ages and you can use them in place of meat in a lot of dishes.

Mmm, they are Tesco continental lentils...They say "Ideal served as a vegetable accompaniment to ham or bacon dishes." So are they puy or green? LOL

I am more or less a complete lentil virgin. and want to cut out red meat at the moment. Thought lentils might be a good replacement.

I reckon they're green but you treat them the same really so it doesn't matter.

make soup - sweat onion and garlic, add water and lentils. 10mins before done add frankfurters. Lots of bread.

I cooked a load of puy lentils today and will mix up lemon juice, olive oil, black pepper, salt and thyme and pour over and mix and then add a small amount of feta. I'll prob take this to work for lunch most days next week.

Shepherdess Pie
Cook Lentils til softish.
In other pan sweat onions, garlic, sliced carrot and mushrooms with fave earthy herb eg thyme, sage.
add cooked lentils, tsp mustard and bouillion stock to cover,season, bring to boil and simmer til carrots cooked.
Put mixture in ovenproof dish.
Top with potato and swede Mash, bake for 20 mins.
Serve with green veg and gravy.
OR
Use Italian herbs, add tomato puree (aparently V good for health)and/or tinned toms.
Same as above but top with olive oil and garlic mash.
I'm hungry just thinking about it
