I wash them and them put them on baking tray and sprinkle with olive oil.

if you don't they are potato wedges, if you do they are more chiplike. i most definitely definteily would not bother if i were you

And how do you get them to go crispy? Mine tend to be pallid and soggy (bit like my thighs ...)

If frying, par fry on a lower heat then to crisp, remove from the oil, turn the heat up to max and then finish them off.

Or so says Nigel Slater and he's never let me down

This helps to get rid of the starch. Then you should fry them for a few mins with the temp lowish, take them our, then turn the temp up hotter before returning them til cooked - that will make the crispy and not greasy.

ah sorry i was thinking homemade chips in the oven. If I were frying them then i wouldn't pre cook but like others have said low heat then turn it up to finish off.
