bbq chicken in the oven

can anyone tell me how to make a sticky salty tomato-y gorgeous bbq chicken marinade for the thighs and legs i'm defrosting, that i can bake in the oven tonight for dinner? been through all my books and don't have anything in there! i do have time to shop for ingredients today.

Coca cola chicken is a fab sticky recipe.

But when in a hurry I cover in tomato ketchup and HP barbeque sauce.

buy the sausage tonight cook-in-sauce (i know and i dont normally buy ready made sauces), it was lovely, i have cooked ribs in it and also chicken and both came out really nice

doesn't take ages and yes there is a ham recipe.

I'm just off out to lunch but if you do a search on coca cola chicken (or scroll down recipes for ages) you'll find it. My kids (and me) love it!

is it nice with sausages?? have only done it with ribs and chicken, its now something that i keep in the cupboard incase i have a day where i cant get out. I put chicken portions in the sauce with some water and put in a really low oven and just leave it to cook, then bout 30 mins before you want to serve i take it out of the sauce and put it on a baking tray and whip it back in the oven, so it not too soggy. I serve with rice, dh doesnt actually like the bbq sauce but he will eat it cooked like this.

I use this sauce with pork or chicken and its delish....

4 tablespoons tomato sauce
2 tablespoons apricot jam (or maybe plum)
1 tablespoon soy sauce
1 tablespoon lea and perrins sauce

Mix all together in a bowl and pour over chicken. It goes lovely and sticky and sort of sweet and sour... yummy!

Thank you very much everyone. We made do with a bbq sauce from a supermarket but it did taste a bit checmically. Am going to try these suggestions over the coming weeks and post back. Off to find the coca cola chicken recipe for a start!

this is the recipe we use, although tend not to use specific quantities and just chuck it all in as i fancy

1 c. water
1 c. ketchup
1 c. honey
2 tbsp. vinegar
1 tsp. salt (optional)
1/4 tsp. pepper
1/4 c. onion, finely chopped and sauteed in butter til soft
2 tbsp. Worcestershire sauce
2 tbsp. lemon juice
2 tbsp. brown sugar
3 tbsp. soy sauce
1 tsp. dry mustard powder
1/4 tsp. ground ginger
1/2 tsp. garlic powder
red wine
rosemary
oregano

have just ordered lea and perrins and hp sauce for the stock cupboard. dunno how we fell out of habit of having any.

Great thread. I've bought Lea and Perrins today too! Helliebean/Nappyaddict, how long do you cook your chicken pieces in the sauce for?

If its chicken breasts I cook it for about 40 mins. At about 180 degrees... do watch it at the end though because it can go from sticky to burnt quite quickly (cos of the sugar in the jam!)

180 also, but for about 30 mins.

sometimes i use beer instead of wine.

a cranberry glaze can be a nice alternative too.
