HELP!!!!! What can I do with

Leeks? I only really use them in soup eg vegetable, leek and potato oh and hav used them in roasted veg. Need inspiration please

Also what can I do with sweet potato? I have roasted this too but unsure what to do with it

While I am at it any extra tips for butternut squash would also be greta

Leeks - cook them slowly in butter but don't let them get brown.

Sweet potato - bake and fill like "normal" potato - my favourite is hot sweet potato with very cold cottage cheese. Or peel, boil and mash with garlic or herb butter.

Butternut squash - I've only ever roasted it in olive oil with salt and pepper, which is lovely, but find it a bugger to peel. There's one languishing in my veg basket at the moment so I think it will be on the menu for tea tomorrow. Thanks for reminding me.

Or make sweet potato wedges - cut the potato into wedges, coat with olive oil, season & add some thyme. Bake for about 10 mins until cooked.

Whizz roasted sweet potato with a bit of stock to make a fab soup - especially yummy topped with roasted pine nuts and bacon bits.

Leeks finely chopped & sauteed in butter are so delicious. I like that with chicken. You can also fry cubes of potato with it. Also very nice with a cheese sauce.

Butternut squash you can roast and eat, or mash with regular potato as a delicious mash. Actually you can add sweet potato and leeks in the same way. I feel quite hungry now!

Mmmm that sweet potato soup sounds lovely. Might even rival roast b'nut sqsh for tomorrow's tea.

sweet potato mash with lime and corriander, nice with slightly spicy chicken breasts.

leeks - easy chicken leek and ham pie with a cream and white wine sauce. Or wrap em in bacon and shove em in the oven!

Roast butternut squash and lee risotto a la Delia smith is lovely - i think the recipe's on the bbc food site. And you do it in the oven so its much easier than usual risotto. Also get one of those t shaped peelers it makes peeling loads easier, even butternut squash.

Leeks - chop, sweat off to soften, add single cream (not loads though), fresh ground nutmeg and black pepper.. ..yummy..

i'm not going to bother posting my ideas because there are already some superb ones on this thread.

And we have a butternut squash in and some leeks... I feel a trip to the kitchen coming on.

Thank you very much they ceratinly do sound yummy will be trying these all very soon.

Have to say when I do roasted sweet potato it is generally quite soft, I thought it would be crispy for some reason

sweet potato - if you want it crispy, peel it and cut into thick chips and then roast it with olive oil (yummy)

we are overrun with leeks (again...sigh)

Pasta sauce - fry bacon then add mushrooms and leeks and a tub of half fat creme fraiche (add chopped garlic at the beginning for taste if you like)

Potato and Leek soup (if you have loads )

And don't bother peeling the butternut - just shove it whole in the oven at 200C (or alongside a roast) for around 30-40 minutes (stick a fork in to see if it is soft). If it needs to go in longer (with a roast e.g.) you can wrap it in foil to stop the outisde burning.

I thought maybe I had done the sweet potato too thick thats why it wasnt crispy will try again
