Five Spice chicken

Just posted this in chat and decided to save for posterity in case anyonne is interested

2 tblsp peanut oil
1 tblsp dark soy sauce
1 tblsp brandy
0.5 teasp five spice powder
0.5 teasp brown sugar
2cm fresh ginger root peeled and chopped
2 spring onions chopped
2 cloves garlic chopped

500g boned chicken cubed
1 large egg beaten
60g cornflour

In large bowl mix together peanut oil, soy sauce, brandy, 5 spice, sugar, ginger, onion, garlic.

Stir in chicken cubes - coat evenly

leave for 1 hr

stir in beaten egg

put cornflour on a plate and roll in chicken cubes until evenly coated

In a wok, heat 500ml peanut oil, add chicken and deep fry for 4 mins over moderarte heat

Increase heat and fry for further 2 mins until golden and cooked.

Usung slotted spoon, lift chicken from oil and drain on kitchen paper

i sort of did this tonight. did all the marinating (though with sherry not brandy), then stir fried the chicken plus marinade with broccoli. served it with rice. v. nice!
