fajitas

well i have wraps, chicken, red onion, peppers, salsa & guacamole..
what spices do i use and do i add them when frying the chicken??

My Schwarz fajita mix says (rather worryingly): "Salt, Dried Onion (11%), Paprika, Sugar, Dried Garlic (7%), Mustard Flour, Cayenne Pepper, Coriander Seed, Nutmeg, Oregano, Cinnamon, Lemon Peel," and then (bizarrely) "Flavouring".
I would concentrate on garlic, Paprika, Cayenne or Chili, Coriander, Nutmet, Oregano and Cinnamon.

Thanks for the replies - wow, that must be a lot of salt in the packet mix!

i have lots of spices so i am sure i can put something together - so i add it when i am frying the chicken and onions?

I usually fry chicken and onions then add peppers. Another minute and then add spices.

And some grated cheese & shredded lettace - the more bits the better, imho. DH is kind of fajitas - hummm, wonder if he fancies treating me tonight...

i don't use spices just plain chicken, onion, mixed peppers all fried then i put sour cream, salsa and grated cheese and crunchy lettuce in the wrap.

REcipe for Fuego spice mix for fajitas, I use this all the time but I reduce the amount of salt quite a lot. It makes enough for several uses and can be stored for up to 6 months in an airtight container. Some might consider this quite spicy but with sour crean, guacamole etc I think it's just right

1/4 cup of Paprika
2 tsp Cayenne pepper
2 tbsp Salt
2tbsp ground white pepper
2tbsp ground black pepper
2 tbsp granulated garlic
2tbsp chili powder
2tbsp oregano

thanks all, i did a mix of
chilli powder
paprika
oregano
cumin
coriander

mixed it all together, put chicken in a baking dish, added olive oil and red onion, put the spices all over and baked for 15 mins, then added sliced mushrooms and peppers, baked for another 10 minutes.
it was perfect! served with salsa/guacamole/creme fraiche. wish i had shredded lettuce and cheese too, next time!

ooh.. ..fajitas.

slice the chicken into strips
slice a pepper (colour of your choice) into similar size strips as the chicken
halve then slice a red onion
zest a lime/lemon (unwaxed), finely chop the zest
juice of above lime/lemon
chuck it all in a bowl
add a generous amount of olive oil
oregano to taste
dried chili flakes to taste

leave to marinate for an hour or so (we used to go to the pub for a pint or two while this was happening!)

cook quickly in a nice hot wok

serve on wraps with the usual bits and bobs
