Roast chicken with lemon and basil
meant to serve 2
6 chicken thighs
olive oil
2 clove of garlic
a lemon
handful of fresh basil
2 glasses of white wine (one to drink while it is all in the oven LOL!!)
put chicken in roastign tin
por olive oil over to moisten them and make a shallow pool
squash garlic in its skin and stick it in roasting tin
squeeze lemon over chicken then put empty lemon shells in roasting tin
roast for 30 mins in preheated oven of 200 degrees gas mark 6
tear up basil leaves and shove in roasting tin after the 30 mins
stick bacck in oven for 10 more mins
take out of oven
pour wine over chicken (you should have drunk first glass by now!!)
put roasting tin on hot flame (yes really) ad let wine bubble for a minute
eat
nice with chunky bread to mop up juices
also do it without the wine bit from ds!
