i try to make them crispy and they come out like chips. lol

can you give me your recipe as im cooking for my dad tomorrow. i cheated on xmas day and got them already done from M&S. complete waste of money as i threw half of them out.

Chop them up so they have lots of edges then boil until almost cooked.
Once drained shake them around to rough up the edges.
In the meantime make sure your oven is really nice and hot and that you have your tray and oil (normal veg is fine) heating either in the oven or on the hob.
When you put the potatoes in the oil they should sizzle right away.
Pop them in the oven until all nice and golden and crispy, giving a little shake very so often to turn them. (about 40 min)

I chop mine up raw, put them in a bowl, pour olive oil, rosemary, and salt over them, and put them on a cookie sheet in the oven at 350.

I do exactly what Indith does. Maybe not boil for so long though, maybe just 6 or 7 minutes.

Would also add that when you par boil them, the water should be salted if you want your roasties crispier. Apparently.

And agree with veg oil. you dont need goose fat to make them taste nice.

We tried the Nigella thing of par-boiling them (7 mins) shaking them to rough up edges, sprinkling them with semolina (not the pudding, the powder ) and putting them in very hot lard. Came out gorgeous & crispy.... we are making them again today with dinner.

i boil for 6 mins, put them in a roasting tray, bash them bout till thetre crumbly on the outside, dash oliveoil over them then crunch seasalt over them,

mix it all up with your hands, put them in the oven for 45 mins gas mark 6

can i add my little 2-pee? Heston recommends leaving them to let the steam evaporate off after you've rumbled them around the collander - prob 10 mins. i do this (after boiling them til tender in salted water) and then get my oil really really hot on the stove and put the potatoes in, then put in oven on 200deg for about an hour, turning and coating them a couple of times. They're gorgeously brown and crispy with light white fluffy potato inside.
