Vegetable Parcels

We are going to a NYE dinner tomorrow night and I want to take something that is easy for the kids but tastes good for everyone. Thought that vegetable parcels might be good.

Have had a look online, but has anyone got a good recipe or suggestions of tasty fingerfood for a party which is filling.

are you meaning pre cooked veggies in some kind of sauce wrapped in filo pastry and brushed with butter and baked in the oven?

A veggie risotto is just the right texture to hold together with in the parcel and you can put a tomato salsa and mozzarella or feta inside too.

Papillon, do you mean like a vegetable pasty type of thing? I sometimes do these to use up my veg and I lightly cook the veggies (usually carrots, green beans, potato, brocolli) then make quite a thick cheese sauce. Let the veg and sauce cool before mixing together, then use bought puff patry to make the parcels, making sure they are properly sealed. Brush with egg then pop in the oven at about 200 for 15 -20 mins.

I did a frozen creme spinach, fresh tomato, egg and potato one and a chickpea, courgette, garlic, potato and fresh tomato. Used puff pastry.

Also made some chickpea and bulghar balls and served them with a tahini hoison sauce that also had dates and cranberries in it!
