banana cake?

anyone got a good recipie for a banana cake.

Do you have a breadmaker? I found an easy recipe for banana cake while doing a google search. It's for the panasonic breadmaker but apparently you can adapt it for your own machine (esp. if it has a cake setting). I was sceptical at first, but I'm typing while eating the first slice!! It's delicious.

You can play around with the ingrediants, use less sugar, part whole wheat flour, add cinnamon or nutmeg, etc. I have also used other over-ripe fruits like pears and it turned out fantastic.

In the breadmaker bucket, put in any order:

2-3 over-ripe bananas
1 cup (or less) sugar
3 tbsp veg oil
2 eggs
2 cups self-raising flour

Put on pizza cycle for about 5 mins (you have to switch the machine off at 5 minutes)

  • scrape down the corners with a spatula about 1/2 way through to make sure everything is mixed.
( I left the lid up and scraped 3/4 times) Put on bake cycle for 55 mins.

My own handmade recipe is:
9oz c. sugar
6oz butter or marg
3 eggs
3 ripe bananas mashed with 3tblsp milk
8oz plain flour
3tsp baking powder

Basically a victoria sponge method folding in the banana mixture at the end. 180C for approx 1 hour depending on cake tin.

My best adn easiest one if Gary Rhodes (although I would never recommend any of his other very complicated recipes) in his Best of British Book. Just mix 8oz SR flour, 4oz soft butter, 4 tbs golden syrup, 2 oz dark brown sugar, 4 eggs. Pour into a 2lb loaf tin (I usually line it) and cook at 180C for 50-55 mins.
