That isn't Toad in the Hole....?? Have some for dinner tonight only thing in the house and wondered if anyone had any ideas they could share??

Baked sausages with new potatoes and cheese

Ingredients
500 g sausages, each sausage cut into 3 large chunks
750 g new potatoes, ideally Jersey Royals, sliced the thickness of a finger
1 red onion, chopped roughly
1 or 2 sweet onions, chopped roughly
1 teaspoon of olive oil
100 g grated cheddar
Salt and black pepper

Method
Mix all the ingredients in a large bowl
Make sure that the olive oil has coated the sausages, potatoes and onions
Lightly season with salt and black pepper (the sausages will add seasoning)
Spread over a high sided baking tray
Bake in a medium oven (190 degrees, gas mark 5) for 45 - 60 minutes, stir the dish once or twice
Cover with grated cheese and check seasoning
Once the cheese has melted serve with peas or a green salad

Butternut squash bake

Ingredients
400 g Lincolnshire sausages
1 butternut squash
1 - 2 sweet potatoes (optional but adds bulk, colour and sweetness)
1 onion, peeled and sliced into rings
A handful of fresh sage leaves, chopped
Olive oil
Salt and black pepper

Method
Slice each sausage into 2 or 3 chunks
Peel the squash and sweet potatoes, slice into 2 cm chunks
Add the onion and sage, mix well
Add a tablespoon of olive oil, salt and black pepper, mix and transfer to a heavy baking sheet, large enough to accommodate everything in one layer
Bake in a medium oven (190 degrees, gas mark 5) for 45 - 60 minutes, stir the dish once or twice but leave edges of the veg to caramelize
Serve with mashed potato and crusty bread

Mexican sausage wraps

Ingredients
450g/1lb pork sausages
8 flour tortillas, wrapped in foil
200g/7oz guacamole
1 romaine lettuce, shredded
200g/7oz sour cream
200g/7oz salsa

Method

  1. Place the sausages on a preheated barbecue and cook for 10-12 minutes, turning occasionally, until thoroughly cooked.
  2. In the last 2 minutes of cooking time, add the tortillas in foil to the barbecue to warm.
  3. To serve, spread some guacamole onto each tortilla. Top with a pile of lettuce, spoonful of sour cream and salsa. Add sausages and roll.
  4. Serve the wraps with extra salsa sauce and a cucumber and spring onion salad.

Sausage and bean cassoulet with potato cakes

Ingredients
1 tbsp olive oil
2 cloves garlic, chopped
1 onion, chopped
225g/8oz smoked streaky bacon, cut into 2cm/½in strips
6 cooked sausages
1 can baked beans
1 glass red wine
290ml/½ pint beef stock
2 sprigs thyme
2 tomatoes, chopped
55g/2oz breadcrumbs
2 tbsp chopped fresh parsley
salt and freshly ground black pepper
For the potato cakes:
225g/8oz ready-made mash potato
1 eating apple, peeled and grated
knob of butter and oil, for frying

Method

  1. Preheat oven to 190C/375F/Gas 5.
  2. Heat a large pan add the oil and fry the garlic, onion and bacon for 2-3 minutes.
  3. Chop the sausages into large chunks and add to the pan.
  4. Add the red wine, stock, baked beans, thyme and tomatoes. Bring to the boil and gently simmer for 8 minutes.
  5. Stir in the chopped parsley and season with salt and pepper before placing in an ovenproof dish. Sprinkle with the breadcrumbs and bake for 10 minutes.
  6. Mix the apple with the potato and season, shape into a cake.
  7. Heat the butter and oil in a frying pan and add the potato cakes. Cook for 2-3 minutes on each side.

Sausage casserole

Ingredients
1 tbsp olive oil
2 garlic clove, crushed
1 onion, sliced
4 sausages, chopped
200g/7oz tinned cherry tomatoes
300ml/10fl oz chicken stock or vegetable stock
splash red wine

Method

  1. Heat the oil in a pan and sauté the garlic and onion for 2-3 minutes or until they have softened.
  2. Add the sausages and fry for 1-2 minutes. Add the tomatoes, stock and wine.
  3. Simmer for 8-10 minutes or until the sausages are cooked through.
