REALLY QUICK chutney question...........

Just popped nigella's christmas chutney on the stove, do I need to simmer it covered or uncovered?
I can't remember from the programe and the recipe I have doesn't specify.

eek, oh well, it may be too late! it is simmering away uncovered as we speak... smells very, erm, festive!

oooh sorry wasn't here ealrier to help. Have made her apple one and would love to know how this one works out.

BTW you did good - as I remember it is uncovered to let the liquid reduce.

Tell me how your chutney tastes now - even though not mature. Big description please!!!

well, it's still bubbling, but...
the smell has cleared my blocked nose completely! it is jam packed with flavour, the sharpness of the granny smith is good and the colour is fantastic, it is really deep yellow with bright red cranberries.
Is this the one you did?

no mine was spiced apple chutney from godess book - but am tempted by the one you have done.

It has started to thicken beautifully and looks and smells fantastic. I am not very good at detecting exact flavours but this does smell excetionally festive.

It's a slight relief actually, we have made hampers this year with biscuits and chocs and other homemade treats and gifts, all quite obviously made by a 7 year old and his mum -but this stuff might even stand a chance of getting eaten!
