do you add white sauce in fish pie?
how do you cook the fish before putting up the pie

I poach the fish in milk for five minutes then remove and set aside with foil over. Use the milk to make a roux sauce. Flake fish into bottom of dish - add eggs, prawns, whatnot. Cover with mash. Meduim oven for 15 mins. Grill top.

Bingo!

(can also do above but in puff pastry w/out potato - my dad called this 'russian fish pie' don't ask me why!)

we used double, put a bit of ntmeg in too. fish pie really is an underrated meal

presume they mean double cream when they talk about heavy cream
I do what dimpledthighs does -
pach fish in milk with knob of butter.
Make a roux (flour and butter), slowly add the milk and whisk. I add some grated cheese into this as well. Also, if you want, you can add veg (mine love peas/french beans/carrot etc) along with the fish. Grated cheese on top of the mash adds a nice crunchy top

then vegetebles and mash potatoes on top?

yes - exactly that.

So fish, egg, prawns etc on the bottom in a roux sauce (with veg if using) then layer of mash (like shepherds pie). my dad did the eggs sliced in a layer between fish in sauce and pots.
