muffins?

anyoen got a good one? dd1 is going to a party tomorrow, birthday cake full of colourings, so am taking her own cake instead. fancy making her some muffins.

Hello name-twin. These are called Fruitburst Muffins, they're fab. Sometimes we have them for breakfast in the summer!

8oz plain flour, 2tsp baking powder, 2 large eggs, 2oz melted butter, 6fl milk, 3.5 fluid oz clear honey, 5oz blueberries, 3oz dried cranberries, 5oz raisins, 5oz dried apricots (chopped), 1tsp orange zest, 1tsp grd cinnamon.

Preheat oven to gas mark 6/180c and either butter a 12 hole muffin tin or line with muffin cases. Beat the eggs, butter, milk & honey together. Then sift in flour & baking powder and stir in remaining ingredients. Spoon the gloopy mixture into tin and bake for 20-25 mins until well risen. Leave in tin for a couple of mins before turning out to cool.

I frequently start making these before realising I don't have all the different fruit - so I often substitute things (ie. raspberries, blackberries or mixed dried fruit). They always turn out OK.

Is she going to be seriously harmed by a teensy slice of birthday cake? (genuine question)

COI: DD used to be egg allergic and it made her really upset not to be able to have what all the other kids ate at parties.

yes, food colourings bring her out in hives, wheezing and itching eyes.
