Healthy (ish!) eating - recipe suggestions to share

I don't know about you but sometimes I just run out of ideas on what to serve up, my daughter is 21 months.
I thought it may be an idea for us to share recipes as I have run off previous suggestions and do still make them (Ems, if you're reading, your lamb casserole is fantastic and so easy!).
I'll start with a couple firm favourites of my, fussy, daughter:

Bean and Sausage Mix
Use frankfurter sausages (I know this isn't actually particularly healthy but they are tasty!), I use Herta ones and cut up about 2.
Put in saucepan.
Add one tin of baked beans, a chopped mushroom or two, some chopped red pepper and a chopped tomato. Then add a splash of milk to make it a bit runny!
Bring to the boil and then simmer for about 5 mins until the liquid has reduced.
Cool and serve!
Mine loves this and it is so quick.

Even quicker is to make pea soup. I use the bouillon vegetable powder, add about 200ml to a good portion of peas. Boil together for about 4 mins and then blitz in a food processor. Top with some grated cheese. Again mine loves this.

Anyone got some good recipes? I would love to keep this active as I do often get stumped on what to cook.

Janus, I do exactly that with the peas, but use less stock and then mix it in with rice to make 'green rice' or I suppose a kind of pea risotto if you are feeling posh!! Dd loves it.
