Goose for Xmas?

My DH is german and they always have goose for xmas - we're having xmas here in the UK this year and i've ordered a goose but i wonder if you can cook it the day before? My MIL seems to this but i'm too embarassed to ask her how too cook it ( she would think i was a terrible wife/mother if i didnt know how to ccok a goose!!)Anybody out there know what i should do?

We had goose a couple of years ago, we slow-cooked it overnight on a very low heat. It was much tastier then I thought goose would be.

We've had goose before- think Delia must have a recipe for it, as that's the only cookery book we have.
