Stuffed Butternut Squash?

I had, and loved, this in a Harvester restaurant at the weekend. The menu describes it as:
Butternut Squash stuffed with spinach and roasted peppers, topped with a stilton crumb and served with corn on the cob.
But I'm hopeless - can anybody tell me exactly how to go about making this please?

slice butternut in half length ways scoop out seeds then scoop out flesh and cube it, saute with garlic and onion or leak and peppers maybe some herbs and season it, then restuff and put it back together so it looks whole again then wrap in foil and roast in oven for 30-40 mins on about 200 take out open up place on bake tray spinkle with wholemeal bread crumbs and cheese of your choice then either grill or bake, its just a guess so dont know if it will work!

This isn't exactly the same but I made this Hugh Fearnley Whittingstall recipe and was delish.

Cut butternut squash in half, scoop out seeds, brush with oil and put dollop of butter in each cavity along with a clove of garlic. Roast on gm 5 til soft.

Scoop out flesh and mash with 200g blue cheese, 75g walnuts, salt, pepper and fresh thyme. Drizzle with honey and put back in oven for 15 mins.

Really easy and very tasty.
