Gingerbread

Does anyone happen to have a recipe for gingerbread that they would share with me please???

gingerbread biscuits or cake?

I like the Dinner Lady's recipe.

Gingerbread

250g plain flour
1/2 tsp bicarb
1 tsp baking powder
1 1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1 egg
50g dark muscovado sugar
50g light muscovado sugar*
150ml milk
1/4 tsp balsamic vinegar (I used red wine vinegar )
6 tbsp vegetable or corn oil
4 tbsp golden syrup
4 tbsp black treacle

Preheat oven to 200/ gas 6

• Combine flour, bicarb, baking powder & spices in a large bowl
• Whisk egg in a large jug & add sugar then milk, vinegar oil, syrup & treacle
• Add the liquids to the dry ingredients
• Stir until mixed but fairly lumpy
• pour into 12 muffin tins or 1 loaf tin
• Bake until top is dry but still squidgy underneath.

Muffins cook for 20 mins, loaf for 45 mins or so.

*(I used 100g light brown sugar)

This is really easy, tastes yummy, smells fab and keeps well.
