...gratin of butternut squash.

I have a butternut squash to use up and really fancied the sound of the gratin of butternut squash on the back of my invoice for the veg box. So have that ready to go in oven.

But what shall I serve with it - for me, bearing in mind I haven't defrosted anything and I don't eat meat?

No rissotto rice in - used it all up at weekend.

I have normal rice. I have lots of veg and salad too.

I would do a tomato based spicy vegetable rice thing along the lines of a biryani/pilaf thingy.
ie put uncooked rice and chopped veggies into a casserole dish with lots of herbs and spices and a tin of chopped tomatoes, cover and cook in the oven for about 40mins-hour.

Oh and need to eat about 6:3-6:45.

Don't do spicy, but easy enough for me to miss spicy hot stuff out.

No tinned tomatoes - have fresh though.

No lentils.

No greens oddly. None came in veg box 0 have potatoes, carrots, onion, leek, tomatoes, lamb's lettuce, cucumber, peppers, sprouts, butternut squash, avocado, broccoli and mushroom.

Have egg, cheese, rice, pasta, veg, salad, potatoes, bread, various herbs/spices (dried), passatta, ....and then frozen fish/quorn.

Yes, I think I should have planned in advance this time. Might just eat the gratin with a crusty bagette now!!! Thanks for ideas - will try some other ideas next time
