soup recipe using squash, carrots & parsnips needed!

brown some onion with a little bit of sugar
then add the squash, carrots, and parsnip. Add a pinch of Salt and pepper, oregano (I have been known to use a dash of chili seasonings for a mexican inspiration diffrent) . add water (a spoonful of marmite can add depth to the flavour) or stock and cook till soft then you can add a bit of cream or creame fraiche, cheese. Not very formal but I tend to make a lot of soup in winter with whatever is hanging around in the crisper. Oh and normally I blend it with a hand blender so there are no complaints of the veg being too big. hope this was helpful and if not i'm sure someone else would be.

Thanks Daemara. It sounds more or less like what I ended up doing. I roasted the veg. 1st with some olive oil, nutmeg, coriander & cumin, then whizzed it in the food processor & added a drop of cream before serving. It's really good.
