Want to make a NICE sausage casserole...Help

O.k i have sausages, carrots, onions and mushrooms. Have only ever done sausage casserole once before with a packet sauce, and it wasn't great as all the sauce dried up.

Anyyone got a good recipe for it.

I usually put in a tin of chopped toms and a tin of beans - and a few herbs, tastes lovely and tell DD's this is what cowboys eat in the wild west!!

I made one last night (using cocktail sausages) loosely based on a recipe I cut out of the paper ages ago (Lyndsey Bareham). It was good:
Cook (puy) lentils in boiling water with a bayleaf for 20 mins. Remove bayleaf. Meanwhile fry onions, garlic (if you have) and sausages in big casserole with oil until sausages are brownish. Lowish heat so the onions etc dont burn. Then add mushrooms and carrots chopped into cubes, and tin of tomatoes. Add the lentils and their water, adding a chicken stock cube. Cook for about 10 more minutes, add s & p.
A personal favourite: the kids love the sausages and tolerate the lentils; I love the lentils and dh eats it all with lashings of chilli sauce.

Soyabean's sounds lovely ? I quite like Lyndsey Bareham's recipes! The one I do is dead easy and tasty, too ? just onions (sweated in a little olive oil), sausages (better if they're a on the spicy side, such as Toulouse or Cumberland) ? brown them ? then add 1 or 2 tart apples, cored and sliced (but not peeled) and a tin of tomatoes. Add a teaspoon or so of oregano, then bring to the boil and simmer for about 40 mins. Yum yum.

my families fav saus casserole recipe is - brown sausages first (either grill or in oven). Dice some potatoes and cook gently with small amount of oil in a saucepan - add chilli powder and pepper if you want for about a minute. Then a tin of chopped tomatoes and half pint stock - any will do. Then add the sausages and cook until potatoes are cooked (about 20 mins to half an hour). You can also add some shredded cabbage on top towards the end. This is also good with quorn sausages for vegetarians.

Right i wa short of time so ended up just buying a sausage casserole mix. Chucked a tin of chopped toms in aswell and it was great.
Only thing is i didn't brown the suasages first. They were cooked in the oven in the casserole for an hour so they will of been o.k won't they ??
A bit late if not as we've all just eaten it.
I'm sure my dad used to just chuck them in, straight out the packet.
