Amaranth and Quinoa

I got some quinoa and used a recipe and quite liked it, and concluded that it is basically to be used in the same way as rice or pasta or couscous, but has various nutritional advantages,eg low in fat, contains all amino acids, so on. Then I got some amaranth expecting it to be just like quinoa but when I cooked it according to the instructions on the packet it came out like porridge and quite oily. I can't find any amaranth recipes. Is this normal? Is there anything more interesting I could do with amaranth?
