Lentil/vegetable cottage pie

At the weekend I was served a lovely lentil/vegetable tomato bake with mashed potato on top but can't get in touch with friend for recipe. Does it ring any bells? I have a feeling it may be Annabel Karmel but gave back my borrowed Meal Planner a while ago.

It was green lentils, big chunks of carrot, courgette and various other yummy things including tomatoes. Mashed potato and cheese on top.

I think I could make it up, but the children (1 & 2) wolfed it down and I'd like to try and impress DH's vegetarian colleague tomorrow!

I think you make it like a bolognaise but with the lentils instead of the mince.

Hopefully someone more knowledgeable will come along soon and confirm that and give you a proper recipe because I would love to try it too!

Sounds as though you've already worked out the recipe!

I don't know this one but I've done a similar one - sweat off some onions & garlic in butter or olive oil, (you can also add carrot & courgette at this stage), then add the lentils (I use red & green - the red makes a thick gravy, and the green gives it texture), stir around a bit, add some veggie stock & mixed herbs. Let it simmer away until the lentils are nice and soft. Then add the chopped tomatoes. Stir a bit more. Transfer to ovenproof dish. Top with mashed potato with cheese stirred in. Top with a little more grated cheese. Bake.

I would add that DH and I loved it, but DS was very lukewarm because of the mashed potato. How can a 17 mo old not like mashed potato????? He eats everything else, dammit!

Well, my friend did get back, and she described it as "leftover special"! Pretty much as described by Corriedale, using whatever veg are around. Sorted.

we had lentils last night and dh will not eat them again - the house stank!

well i think pulses can have that affect on people, if the system is fairly regular! eek too much detail.
but sometimes the same thing happens if i put soup mix in a veg soup - off he goes
