ORCHARD FRUIT & BERRY SPONGE (ponce)

Ingredients:

750g apples & pears (approx 2-3 of each) peeled, cored and chopped.

3 tbsp honey plus 2-3 tbsp for drizzling

1 tsp mixed spice

120g butter

120g light soft brown sugar

2 medium eggs, beaten

285g self raising flour, sieved

150g blackberries

1 apple, cored and finely sliced.

METHOD

  1. Preheat oven 180/350/Gas 4. Butter and base line a 20cm round loose bottomed cake tin
  1. SImmer the apples and pears in a little water for approx 10 mins until just soft. Pour out the liquid from the cooked fruit then add the honey and mixed spice. Heat for 1-2 mins then leave to cool.
  1. Cream together the butter and sugar until pale and fluffy. Gradually beat in the eggs. Fold in the flour and then carefully stir in the apples and pears.
  1. Spoon the mixture into the prepared tin, scattering half the blackberries into the mixture.
  1. Decorate the top with the apple slices and the remaining blackberries.
  1. Bake for 40-50 mins or until golder or cooked through. Drizzle over 2-3 tbsp honey. Leave to cool slightly before taking out of hte tin.

Serve with custard, plain yogurt or a dollop of cream.
