I chuck a few onions in (to bulk it out) and a red pepper if I've got one, lots of chilli, either powder/flakes and a good squirt of tabasco. i do mine in the slow cooker as I use cheap mince.

brown mince first and drain off any fat before chucking in slow cooker, add kidney beans about an hour before the end and turn up to high.

We love chilli, it's even nicer reheated the next day

I fry up the onions and mince with garlic

In a cup i mix up
Chili powder (i used about 3/4 tsp of hot to 500g mince)
2 rounded tsp cumin
1 tsp cocoa powder or hot choc powder
1 beef stock cube
1 to 2 tsp flour
Salt
pepper

Then lob it in, cook for a bit say 3 mins, stirring. Then lob in one or two tins chopped tomatoes and kidney beans. Cook for about half an hour or more.

This is the recipe I use

Serves 4 - Prep time 30 mins Cook time 30 mins

1 tbsp veg oil
1 large onion chopped
450g mince
2 red and 2 green chillies (I just use chilli flakes)
1 can chopped tomatoes
1 garlic clove
1 can kidney beans
5 fl oz orange juice
5 fl oz beer
2 tbsp tomato puree
1/2 tsp ground cumin
1 tsp allspice

heat oil and cook onions until soft, add mince until browned off, then add the cumin and allspice and cook for a couple of minutes. Then add chillies, tomatoes, garlic, kidney beans, orange juice, beer, tomato puree and season well.

Bring chilli to the boil then reduce heat and simmer gently for 30 mins.

Lucycat. your post reminded me of a slow cooker in my cupboard, I've now made the chilli and it is slow cooking, we'll eat about 8 so it should be ok. (fingers crossed)

I've used

Mince
Canned Tomatoes
1 x tin kidney beans
1 x tin kidney beans in chilli sauce

Hope it turns out ok.

Radley · 22/11/2006 23:19
