Need to make a cake for school.. now the recipe has to be fairly straight forward/fool proof but would like (of course) to make something that is utterly delicious...

Lemon Syrup cake

40z/100g self-raising flour
pinch of salt
1 teaspoon baking powder
4oz fine semolina
3 eggs
4 oz caster sugar
2oz butter (melted)
zest of a lemon

8 oz caster suger
juice of lemon.

Sift flour, salt and baking powder.
Mix with semolina
Whisk eggs with sugar until pale, light and fluffy.
Fold in flour/semolina mixture, the melted butter and lemon zest.
Pour into greased 7ich square tin - bake 25030 mins gas mark 4.
Make syrup with caster sugar and lemon juice and 8fl oz of water - disoolve all sugat, bring to boil, simmer of a minute.

Remove cake from oven and use a skewer to make holes in it. Pour over syrup and leave to cool (at least 2 hours)

Easy peasy, lovely!

EGGLESS CHOC CAKE (v.v.simple)

Grease & line 2 8" Sandwich tins

Whisk together in jug: 8fluid oz milk, 4 fl oz oil, 1 tsp vinegar, .5tsp vanilla essence.

Sieve together: 8oz plain flour, 8oz castor sugar, 2oz cocoa, .25 tsp Bicarb Soda, 1 level tsp Baking Powder, .25 tsp salt.

Stir liquid ingredients into dry. Beat well with wooden spoon to a smooth slack. Pour into tins. Bake at 190 Degrees C /Gas 5 for approx 25 mins. Fill with buttercream, top with choc icing.
