Ideas for pastry.....

Getting bored of quiches, have just discovered bridie pies from Saturday kitchen, which are like cornish pasties, but what else do MNers do with pastry? Need some inspiration.....

puff pastry is fab

salmon en croute
mushroom tart
chicken breasts and mushrooms wrapped up

shortcrust - mini chicken pies made in muffin cases with frozen peas, cooked chicken, bits of asparagus and spoon of creme fraiche inside

don't make pastry though. Buy it

Do you start with raw chicken and raw salmon then, or cook them first then wrap them up.

Haven´t got a good sweet tart recipe doormat - what´s your fave?

I usually cook the filling first

any sort of fruit that is in season tbh

just simmer till soft with a little sugar and lemon juice
then drain

Last night we had the most delicious dinner.

Season and top with rosemary some boneless lamb steaks. Then fry the lamb steaks for 2 minutes each side. Leave to cool. Roll out some pastry squares just big enough to wrap around the lamb. Put the lamb on the pastry, top with 1tbsp of cranberry sauce and cover with the pastry (use beaten egg around edges to seal) . Pinch to close. Put in fridge for 20 mins to set. Wipe over the top with more beaten egg, put a sprig of rosemary through the top and bake for 20-25mins. So yummy and easy to make. We had ours with minted cheesey mash and veg.
