whatever you would cook for the rest of you

I'd toss it into a casserole with a large glass of wine

make a basic pasta type tomato sauce, brown the chicken off and serve it in that with some pasta or rice if yopu have it?
ds1, 16m, loves it!!

OK - brown off chicken - then slice onions and peppers into 6/8 pieces each lengthways - fry very hot in olive oil until blackened around the edges, cut tomatoes in half, fry these, when squishy, throw in large glass of wine (white or red - either would be good TBH) and enough water or stock to cover, toss in some herbs if you like or a bayleaf, leave on hob for 40 minutes or so, gobble gobble job done

agree with MP, that's plenty to make a tasty and saucy dish.

maybe cut the breast into strips...

morningpaper · 16/11/2006 12:09

mmm yes

strips good or chunks

TheHighwayCod · 16/11/2006 12:10

i find breasts not as juicy as thighs

clairemow · 16/11/2006 12:15

Also you could add some stock and a tin of tomatoes to MP's recipe and some potatoes, and bingo, you have a complete meal all in one pot.

prettymum · 16/11/2006 12:23

hmmm they all sound tasty!! i cook mostly curries and jerk chicken and im used to cooking thighs and legs for these as i find breasts too dry.

but i want dd to have more variety of meals so thought id try breasts
