A CULLINARY CHALLENGE! What to make for dinner? I've got ...

... chicken breasts, a couple of wizzened leaks, some red onions, carrots, a yellow pepper and a green pepper. Also got some cheddar, some parmesan (would prefer not to use this as I need it for tomorrow's dinner), a few eggs, various pastas, couscous and a handful of rice (not enough to give everyone a portion of rice but enough to add a handful to a casserole type thing).

I've got a few ideas going round my head but can't quite make a full meal out of any of it. Trying not to go to the shops again today as I am so disorganised I've been to the shops for bits and bobs every day recently.

Chicken and leek lasagne? My kids and my husband loves it! I stir a bit of wholegrain mustard into the cheese sauce mmmmm
