Please would some kind person look up Nigella's timing for Roast Beef. I find her timings the most accurate of all my books but unfortunately my copy is lurking in a packing box somewhere waiting to be discovered again. I just spent a weeks mortgage on a piece of beef and I dont want to bu**er it up!

Hello Dizzydo

Beef Starting temp 250 or gas 9 after 15 mins down to 180 or gas 4.
For rare 15 mins per 500g, medium 18 mins, well done 25 mins.

Hope this is the bit you meant. She also has timings for a rib I think...

No problem at all! DH managed to undercook our roast today, so shall be paying more careful attention to timings myself next time!

Nigella's timings tank.
I made her rice pudding yesterday and it was more than ready an hour before she said it would be.

We always roast our meat according to Nigella's times now, but you really need to get meat out of fridge a good hour before cooking for it to work.
Its funny about Nigella, lots of people say her recipes don't work. I find the exact opposite, it's Jamie Oliver that doesn't seem to work out for me. Its not that I can't cook without really exact instrucions, I just think they are sloppy.

Interesting how different writers work for different people. Think it must be something to do with ovens, temperature meats kept at and all kinds of different factors. I usually dont put the meat anywhere near the frig 24 hours before I roast it. I think Delia's timings are rubbish, they NEVER work for me.
